The Mustard Seed company was started in Missoula, Montana, in 1978 by sisters Nancy and Betty Tokumoto along with Betty’s husband, David Hall. Betty and Nancy grew up in Okinawa, Bangkok, and Hawaii and then attended college in Oregon; these experiences provided them with the unique ability to create and blend the cooking styles of the Far East with the tastes from the Pacific Northwest.
In 1992, the team introduced the Noodle Express concept in Missoula at the Southgate Mall. The vision behind Noodle Express was to deliver the same great flavors of the Mustard Seed in a fast-casual environment.
Today, the Mustard Seed and Noodle Express restaurants span three states, including Montana, Idaho, and Washington.
